Gluten Free & Fried in Ghee! Pancakes never filled you up so good

Ingredients

  • 2 cups oat flour
  • 3-4 tbsp Ancient Organics Ghee
  • 3 tsp baking powder
  • ¼ cup sugar
  • 2 eggs
  • 2½ tsp lemon juice
  • 1 cup milk
  • ⅛ tsp salt
Tools:
  • Large skillet pan

Instructions

Make the Batter
  1. Melt about ½ tsp of ghee per pancake, or as much as you need to coat a thin layer on the bottom of the pan.
  2. Work in batches and add about ¼ cup of batter for each pancake.
  3. Cook on medium heat until you see small bubbles forming, then flip.
  4. Cook on the other side for about 1-2 minutes and set aside.
  5. Repeat by refreshing the ghee in the bottom of the skillet each time until all the batter is gone.
Serve & Enjoy!
  1. Serve the pancakes immediately and top with fresh berries, more melted ghee, and maple syrup.
