
Blueberry Muffins with Lemon Ghlaze

Ingredients
Muffins
- 8 tbsp ghee
- 2 cups blueberries
- 2 cups flour
- 1 cup sugar
- ½ cup milk
- Zest from one lemon
- Juice from half lemon
- 2 tsp baking soda
- 1 tsp salt
- 1 tbsp vanilla
- 3 tbsp coarse sugar
Ghlaze
- 2 tbsp Ghee
- 1 tbsp milk
- ½ tsp lemon zest
- 1 tbsp lemon juice
- 1 cup powdered sugar
Tools:
- Muffin pan (6 tin)
- Hand mixer
- Large mixing bowl
Instructions
Mix the Batter
- Preheat the oven to 375°F.
- To a large mixing bowl, add eggs, sugar, vanilla, lemon juice and zest, milk, and ghee. Mix with a hand blender until creamy.
- Next add the flour, baking soda, and salt. Mix to combine.
Add the Blueberries
- Add the blueberries to the bowl and gently fold them into the batter.
- Grease a 6 tin muffin pan with ghee and add the batter into each compartment.
- Sprinkle coarse sugar on top for a sugary crunch
Make the Ghlaze & Enjoy!
- Bake the muffins for 30 minutes.
- While they are baking, make the glaze by combining melted ghee, milk, powdered sugar, lemon juice, and lemon zest to a bowl. Stir to combine.
- Glaze the tops of the muffins once they are cooled. Enjoy!
