
Baked Shrimp Scampi w/ Lemony Ghee Breadcrumbs

Ghreat as a main dish or appetizer, it showcases an amazing balance of tender shrimp, buttery breadcrumbs, and citrus fresh flavor.
Ingredients
- 1.5 lbs jumbo shrimp
- ½ cup Panko breadcrumbs
- 3 tbsp Ancient Organics Ghee
- ¼ cup parsley
- 2 garlic cloves
- 2 tbsp grated parmesan
- 1-2 tbsp lemon juice
- 1 tbsp lemon zest
- 2 tbsp white wine
- 3 tbsp ghee
Tools:
- Medium or Large cast iron skillet
Instructions
Prep the Shrimp
- Preheat the oven to 425°F.
- Wash and peel the shrimp, leaving the tail on.
- In a large bowl, add the shrimp, 1 tbsp melted ghee, white white, salt & pepper.
- Toss to combine and set aside.
Make the Breadcrumbs
- In a small mixing bowl, add the breadcrumbs, grated garlic cloves, most of the chopped parsley, lemon juice from ½ of a lemon, lemon zest, grated parmesan cheese, salt, pepper, and 2 tbsp of melted ghee.
- Mix to combine.
Assemble the Shrimp Scampi
- Arrange the marinated shrimp in the cast iron skillet in a circular pattern, overlapping each shrimp just a little.
- Cover the top in an even layer of the bread crumbs.
Cook & Serve
- Cook the shrimp for 10-12 minutes.
- Broil for the last minute to get the breadcrumbs extra golden brown.
- Serve over pasta or as a side dish. Enjoy!
